Iris Estate Elipse

At Hydrangea, it’s no surprise that we enjoy fruit-forward, process-forward coffees. We love washed coffees as well, but it’s rare to find a cup that achieves a true balance of both. Elipse from Iris Estate is one of those standouts. Nestled high in the mountains of VolcĆ”n, Panama (up to 2,300 MASL), Iris Estate is among the highest-elevation farms in Latin America. Rich volcanic soil and native forest shade allow slow cherry maturation that enhances sweetness, clarity, and aromatic depth.

This lot showcases Jamison Savage’s innovation in processing—a nitrogen maceration followed by a washed finish, making it a hybrid-process Gesha. Savage is known for pushing fermentation techniques to new territory while preserving terroir, and his coffees consistently perform on the world stage. This very coffee was used by the 2024 Barista Champion and contributed to a third-place finish at the 2025 World Barista Championship.

We love this coffee for its uniquely balanced profile: both fruity and floral. It’s elegant and clean, showcasing delicate medium-intensity fruit notes of fresh red apple and candied raspberry and strawberry, complemented by floral hints reminiscent of hibiscus and jasmine tea. The body is silky with a long, sweet finish—our favorite aspect is the weightless clarity that still carries expressive flavor.

Brew Guide

Materials:Ā 

  • Dripper: V60 01Ā 
  • Filter: Abaca 2 cup filterĀ 
  • Kettle: Fellow Stagg
  • Water: 92 °C with ~80ppm water (we used a water composition of a calcium to magnesium ratio of about 1:3). If using Apax, we recommend using Jamm.Ā 
  • Grinder: ZP6 at 5.6 (if using a different grinder, you can get a rough estimate of an equivalent grind size here)Ā

  • 00:00 pour to 50g, Circle pours, medium to fast flow rate
  • 00:40 pour to 100g, Circle pours, medium to fast flow rateĀ 
  • 1:15 pour to 150g, Circle pours, medium to fast flow rate
  • 1:45 pour to 235g, Center pour
  • ~2:45 Total brew time
