Process: Anaerobic thermal shock
Red Plum focuses on deepening red fruit characteristics through a pulp fermentation process combined with anaerobic stages. After fermentation, the coffee is washed with thermal shock to seal in flavor.
In the cup: rose, raspberry, and plum, carried by a medium body and brilliant acidity.
We chose this lot for its bright, juicy character and rounded red fruit sweetness.
