Farm and Producer

Néstor Lasso works with his family at El Diviso near Pitalito in southern Huila. Together with his brother Adrián, he has developed the farm’s focus on specialty varieties and experimental processing. Their collaboration with Jhoan Vergara of Las Flores and exporter Cata Export has supported that work while El Diviso remains a Lasso family farm. This Sidra selection was grown at 1,750 meters.

Variety

Sidra is an Arabica selection associated with specialty production in Ecuador and also cultivated elsewhere in Latin America. Genetic studies have placed tested Sidra material in the Ethiopian genetic group. It is valued for cup-quality potential, with cultivation and processing shaping the expression of each lot.

Processing

Natural processing dries the coffee with the cherry surrounding the seed. Contact with the fruit during fermentation and drying can contribute to fruit expression and body; careful moisture management remains important.
