Instead of increasing the pressure of the fermentation tank by adding CO2 or Nitrogen, Diego creates a vacuum environment where the pressure of the fermentation tank drops below 1 bar, the atmospheric pressure. With this technique, he aims to get as close as possible to 0 bar pressure, essentially recreating the conditions of space, with no gas, no oxygen available. In this environment, different microbes (yeasts and bacteria) are active, which creates a very unusual cup profile.
