El Burro Estate, Lot 15

El Burro Estate is part of Lamastus Family Estates in Potrerillos, Dolega, in Panama’s Chiriquí highlands. Established in 1925, the estate is now owned by the Lamastus family and lies partly within Volcán Barú National Park.

Coffee grows in young volcanic soils beside native cloud forest. Cool nights, a comparatively dry dry season, and heavy wet-season rainfall distinguish El Burro’s growing conditions. The producer describes an extended ripening period in this high-elevation setting; the elevation listed above applies to this selection.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. Panamanian Gesha is valued for its high cup-quality potential at altitude and often shows delicate floral and stone-fruit aromatics. Cultivation, harvest, processing, and roasting all shape how those characteristics appear in the final cup.

Processing

In natural processing, the coffee dries inside the whole cherry before the dried fruit is removed. The Lamastus family’s classic natural method moves harvested cherries directly to drying, without a separate tank-fermentation stage. Drying the fruit around the seed can contribute a fuller texture and concentrated fruit expression.

For its classic naturals, the family describes drying on beds or in a dark room for approximately 30 days.
