Farm and Producer

Rafael Velasco grows this Gesha at Finca La Colina in Inzá, Cauca, at around 1,820 meters. His coffees have reached specialty buyers through connections with fellow producer Eyder Martínez. This selection is prepared using a semi-washed approach.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

The cherries begin fermenting before they are pulped without water, leaving some mucilage around the seed. The parchment coffee then undergoes a second fermentation in sealed containers before it is spread in thin layers for slow drying.
