Nuguo is a unique product of Nature guarded by Gallardo family. In Café Gallardo we attempt to be part of your creation of sublime sensorial experiences. Nuguo is originated from geisha coffee fruits that contains an extraordinary composition of Natura.
For BOP competition we submit our best mix of nano lots, for which we work in a way that can be summarized as care-process-cup. First we take care of the coffee plants and pick the coffee fruits, in a way that we allow terroir to have its best expression; then, we process coffee fruits trying to preserve and intensify the best characteristics of Nuguo coffee seeds; finally, we cup all our lots selecting the best ones to mix them in a matrix of possibilities, until we find our local maximum cupping points mix, and we submit it to BOP.
We aim for a complex, floral, acid and sweet cup, that can be hosted by you. Specific data about Nuguo Washed BOP mix origin and process:
Region: Jurutungo, Candela Basin, Chiriqui, Panama. -Altitude: 1800-1980 masl.
Harvest: January-April. -Washing
Process: Cherries are pulped, fermented for approximately 40 hours at 16 Celsius average, then stir in spring water to remove mucilage. -Drying room conditions: aproximately 24 Celsius, 55% Relative Humidity, during one month.
