Cabaña Abajo is the lower portion of the Cabaña plot at Hacienda La Esmeralda's Cañas Verdes farm. The Peterson family separates the estate's harvests by plot and preparation, including this washed Gesha.

Cañas Verdes combines a distinct dry season with cool highland air. Parts of the farm belong to the family's original holdings, acquired in 1967.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

The cherries are depulped and fermented in a cool room before washing. The coffee then dries in parchment on raised beds. “Abajo” means lower, identifying the part of the Cabaña plot from which this selection comes.
