Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

The cherries are depulped and the coffee ferments for 72 hours in a cool room before washing. It then dries slowly on raised beds for 11 days. These controlled fermentation and drying stages prepare the coffee for milling and roasting.
