Farm and Producer

Bekele Belaychow is a smallholder producer in Bensa, Sidama, who grows the Ethiopian selection 74158. His experience includes work with the Hache cooperative and exporting coffee from his own farm. Access to a small hand pulper has allowed him to prepare washed selections alongside the naturals more commonly produced by smallholder exporters in the area.

Variety

74158 identifies the Ethiopian planting selections used in this lot. Numbered selections are part of Ethiopia’s approach to maintaining and improving coffee planting material, alongside locally named landraces.

Processing

A yeast culture is introduced during fermentation to guide microbial activity. This gives the producer a way to influence consistency and aromatic development before drying.

In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
