Farm and Producer

Hugo Berdugo farms in Palestina, Huila, continuing a coffee-growing tradition passed through his grandparents and father. Five hectares of his 5.5-hectare property are planted with coffee, including Pink Bourbon, Ombligón, and Gesha.

He has undertaken SENA training and served in leadership roles in a local growers' association. This Pink Bourbon was prepared through La Palma y El Tucán's Bio-Innovation program.

Variety

Pink Bourbon is a pink-ripening Arabica selection associated with Colombian specialty coffee. Genetic testing of coffees sold under this name has found Ethiopian ancestry, so the name alone does not establish a Bourbon cross or a uniform genetic identity.

Processing

The lot's preparation includes 98 hours of anaerobic fermentation in whole cherry, followed by 34.5 hours of aerobic mucilage fermentation. After washing, drying combines 820 hours on patios with 18.5 hours of mechanical drying.
