Farm and Producer

Francy Castillo manages El Ubérrimo with her family in Arboleda, Nariño. She grew up working alongside her parents and four sisters, studied agronomy while continuing farm work, and graduated in 2019. Her work combines coffee cultivation with soil conservation and support for neighboring producers through the Berruecos collection project.

Variety

Pink Bourbon is a pink-ripening Arabica selection associated with Colombian specialty coffee. Genetic testing of coffees sold under this name has found Ethiopian ancestry, so the name alone does not establish a Bourbon cross or a uniform genetic identity.

Processing

In washed processing, the fruit pulp and remaining mucilage are removed before the coffee is dried. This approach often emphasizes a defined structure and separation of flavors, while fermentation and drying choices still influence the result.
