This particular lot undergoes a carefully controlled process: after harvest, the cherries are exposed to 72 hours of oxidation, followed by 24 hours of fermentation in sealed blue cans to intensify flavor development and aromatic complexity. The coffee is then slowly dried over 20 days, allowing the sugars and acids to stabilize, resulting in a cup that is elegant, floral, and deeply nuanced.

NOSCOFFEES is a brand of specialty coffee sourced from the Nariño region, under the direction of producer Huver Castillo and Andres Martinez. Through this brand they buys and processes coffees from several farms who may not have the resources or infrastructure to do so themselves.
