Henry Bonilla Murcia grows specialty coffee at his family's La Florida farm in Huila. He took responsibility for the farm after his father's death in 2014, working with his brother to introduce specialty varieties and improve processing.

Processing

This coffee is prepared as a natural, with the seeds remaining inside the whole cherry through fermentation and drying. Controlled fermentation and gradual drying help manage the fruit-covered coffee before the dried cherry is removed.
