Farm and Producer

Las Margaritas is part of Rigoberto and Luis Eduardo Herrera's Café Granja La Esperanza project in Valle del Cauca. Their family's coffee work began at neighboring Potosí and developed into a group of farms focused on distinct varieties and processing preparations.

Las Margaritas is a longstanding source of the group's Sudan Rume. This selection carries its Natural XO designation.

Variety

Sudan Rume is an Arabica selection associated with the Boma Plateau. Its genetic diversity has made it useful in coffee breeding, including as a parent of newer hybrids. Here it is offered as a named selection, with the farm and processing method shaping its individual expression.

Processing

XO is Café Granja La Esperanza's name for an extended fermentation preparation. For this natural selection, the coffee ferments and dries with the cherry around the seed. The dried fruit is removed during hulling.
