Farm and Producer

Mario José Hervas brought experience as a rose farmer and agronomist to Finca El Meridiano, which he began developing in 2011. The farm sits in the cloud-forest foothills of Pichincha, Ecuador, at approximately 1,350–1,500 meters.

Mario maintains a nursery and selects plants for how they perform on the farm. Mejorado is central to that work, with cultivation and processing adjusted from harvest to harvest.

Variety

Mejorado, often sold as Typica Mejorado, is cultivated by specialty producers in Ecuador, including Finca Soledad and Hacienda La Papaya. Producers keep this selection distinct from their other varieties during cultivation and processing, allowing its character to be evaluated across different preparations.

Processing

Selected cherries begin fermenting before depulping. The parchment coffee then undergoes a second fermentation before washing and drying on raised beds inside covered, parabolic dryers.
