Hacienda La Papaya is a pioneering farm in Ecuador’s Saraguro region, founded by renowned producer Juan Peña. Established in 2010, the farm is known for its dedication to quality and research-driven innovation. With a unique dry-tropical climate, drip irrigation systems, and a robust genetic seed bank, Hacienda La Papaya produces high performance, first generation varieties that are disease resistant and nutrient efficient.
This reserve lot represents the most selective and meticulous work at Hacienda La Papaya. Only the ripest, most flawless cherries are hand-harvested by a dedicated team, then undergo a carefully monitored 48-hour yeast-inoculated fermentation using Saccharomyces cerevisiae before drying over 22 days.
The result is a vibrant, expressive cup with guava, honey, orange, and sweet aromatic complexity. Grown at high elevation and guided by agronomic research, this coffee reflects the farm’s ongoing pursuit of innovation and quality.
