Farm and Producer

Finca Inmaculada is a pioneering specialty coffee estate located in Pichindé, Cali, within Colombia’s Valle del Cauca region. Nestled at 1,750–2,000 meters above sea level in the foothills of the Farallones National Park, the farm spans 60 hectares, with over half dedicated to rare and exotic coffee varieties such as Sudan Rume, Laurina, Geisha, and the highly rare Eugenioides.

Variety

Gesha, also spelled Geisha, is an Arabica variety with Ethiopian origins. It is valued for high cup-quality potential and floral aromatics, especially under suitable high-elevation growing conditions. Its expression also depends on cultivation, processing, and roasting.

Processing

This Signature selection began with 405 kilograms of cherries and was dried with the fruit intact on raised beds for 25 days. After drying, the coffee was milled and screened, with most of the finished lot falling within screens 17 and 18. Whole-cherry drying keeps the fruit around the seed during this stage; careful drying and sorting determine the finished preparation.
