Gonzalo Hernández developed Coffea diversa around a coffee-garden approach: growing and evaluating many botanical selections rather than focusing on a single variety. The project maintains a collection of planting material and produces small, separate lots from selected plants.

Variety

Wush Wush is associated with Ethiopian landrace material and is also cultivated in Latin America. It is one of the selections grown separately by producers exploring a wider range of Arabica planting material; its expression depends on both the site and processing.

Processing

Honey processing removes the cherry skin while retaining some mucilage, the sticky fruit layer around the seed, during drying. No honey is added: the name refers to that retained fruit material, which can influence sweetness and texture.
